“Seconds” Brown Rice Salad

This is the salad that everyone goes back to for seconds, so that’s what we call our version of this dish that’s permanently on the favourites list. There are many versions of this recipe around, and no one really knows where it originated. It is ridiculously easy to make and it’s a great salad to take along to a BBQ – remember to keep it cool and crunchy in your Thermocube™. And if you happen to have any leftover, it tastes even better the next day. Ingredients – Salad 2 cups (400g) brown rice 6 spring onions, finely chopped 1 red capsicum, finely chopped 60g currants 60g raw or roasted cashews, finely chopped 2 tbsp sunflower seeds 2 tbsp pepitas 8 sprigs flat-leaf parsley, finely chopped Ingredients – Dressing 3 tbsp olive oil 2 tbsp soy sauce 2 tbsp lemon juice 1 garlic clove, finely chopped Salt and pepper, to taste

  • Cook the rice according to the packet directions, or steam in the Thermomix following these steps:
    • Weigh rice into the Simmering Basket then rinse under cold running water
    • Add 1200g of water to the bowl
    • Place the Simmering Basket of rice in the bowl – put lid and MC on
    • Steam for 35-45 minutes – Varoma temp – Speed 3
    • Rinse under cold running water then set aside to drain
  • Spread out the cooked rice on a flat tray and refrigerate until cool
  • Place all dressing ingredients in a leak-proof container, or small jar, seal tightly and shake well to combine
  • In a large bowl, combine the cooled rice with the remaining salad ingredients and dressing
  • Mix well and store in the fridge until ready to serve
