
My fabulous friend brought this delicious curry along to a recent Curry Night Dinner Party, and I just had to share the recipe because it’s soooo easy!
Of course, the Thermoboss kept her dish piping hot for hours and the spillproof silicone lid means she didn’t risk redecorating the inside of her car!
Place 3-4 chicken breast fillets (chopped) in slow cooker
Add:
1L chicken stock
400ml coconut milk
400ml coconut cream
2 tbsp of tumeric, ground
2 tsp curry powder of choice
2 tsp lime juice
3 tbsp fish sauce
Pink himalayan salt & cracked black pepper to taste
Vegetables of your choice – we used carrots, spinach, squash, cauliflower, broccoli, spring onions, red capsicum, and green capsicum
Cook in slow cooker on low for 8 hours
Stir through 1 x handful of chopped fresh coriander, chopped, just before serving
